Abstract

The present invention discloses a production method of quick frozen dumplings, and aims to provide frozen dumplings with hardly broken seal for poaching. A technical scheme adopted by the invention is to smear solid glutinous rice paste on joint of the dumpling wrapper during sealing. The production method of quick frozen dumplings disclosed by the invention comprises the following steps: (1) making solid glutinous rice paste; (2) smearing solid glutinous rice paste on joint of the dumpling wrapper during sealing and kneading the dumpling seal; and (3) carrying out quick-freezing on the dumplings, sealing the dumplings in packages and storing at low temperature. The technical scheme adopted by the invention has the advantages of convenient operation, simple production process and hardly broken seals of the quick frozen dumplings.
本发明公开了一种速冻水饺制作方法,目的在于提供一种水煮时封口处不容易破裂的速冻水饺。本发明所采取的技术方案是水饺封口时在饺皮粘接处涂抹固态糯米浆糊。本发明公开的一种速冻水饺制作方法,是按下列步骤操作的:(1)制作固态糯米浆糊;(2)水饺封口时在饺皮粘接处涂抹固态糯米浆糊,捏合水饺封口处;(3)速冻水饺,封闭包装,低温冷藏。本发明所采取的技术方案操作简便,生产工艺简单,这种速冻水饺封口处不易破裂。
